The UMF™ is a comprehensive rating, determined on the basis of individual MGO, Leptosperin, DHA and HMF measurements. The latter are scientific, single-compound measurements whereas the UMF™ rating is a global, overall number, which gives a clear specification that both consumers and producers can reliably use, with regards to purity, authenticity and overall mānuka quality.

Knopf Honey carries the various levels of certification necessary to authenticate the most healthful, fresh and genuine mānuka honey, produced with loving care along the entire supply chain.

Methylglyoxal, by its full scientific name, is the basis for mānuka honey’s antibacterial properties and an important measure of its potency. The larger the number, the greater the concentration of MGO in a given product. UMF™ certification is your assurance that this compound is present in the declared quantity level, and a trustworthy ally in your overall wellness goals.
Leptosperin is a signature compound found only in the nectar of the mānuka flower and which can only be created by nature. By measuring this unique compound, one can clearly establish the authenticity and origin of mānuka honey. Laboratory research also shown that leptosperin has anti-inflammatory qualities in proportion to the overall UMF™ scale rating.
Dihydroxyacetone, by its chemical name, is progressively converted to MGO in healthy, living honey. It acts as a stabilizer of the MGO rating value, as it slowly transforms into MGO over time. The higher the DHA rating, the longer the expected life of the MGO rating in a product. This is why the best mānuka honey must have a DHA rating of more than 70 mg/kg to be UMF™ certified.
Another compound of great interest is hydroxymethylfurfural, whose presence at the required levels confirms that your mānuka honey has not been overheated or stored for an excessive period, or in improper conditions. The HMF rating mirrors the overall quality and unique blend of living properties you can expect in mānuka honey produced by an UMF™ certified supplier.
