Methylglyoxal, by its full scientific name, is the basis for mānuka honey’s antibacterial properties and an important measure of its potency. The larger the number, the greater the concentration of MGO in a given product. Leptosperin is a signature compound found only in the nectar of the mānuka flower and which can only be created by nature. By measuring this unique compound, one can clearly establish the authenticity and origin of mānuka honey. Dihydroxyacetone, by its chemical name, is progressively converted to MGO in healthy, living honey. It acts as a stabilizer of the MGO rating value, as it slowly transforms into MGO over time. The higher the DHA rating, the longer the expected life of the MGO rating in a product. This is why the best mānuka honey must have a DHA rating of more than 70 mg/kg to be UMF™ certified.
